How to Make

Prawn Aglio Olio Confit Garlic
Ingredients
8-10 Cloves of Garlic
200ml
Olive Oil
Instructions: Combine the garlic and olive oil in a vacuum-sealed bag. Vacuum seal the bag. Sous vide the garlic at 45°C for 50 minutes.
Pasta Ingredients
250g Flour
20ml Olive Oil
2 Eggs
½tsp Salt
1-2tbsp Water (if needed)
Instructions: On a clean surface, combine all the ingredients. Knead the dough for 8-10 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest at room temperature for at least 30 minutes. Roll out the dough and divide it into smaller portions. Cut the dough into shapes: fettuccine or tagliatelle. Cook the pasta in boiling salted water for 1-3 minutes.
Cook Pasta with Prawns
5 Cloves Chopped Confit Garlic
3 Red Chilies
3 Fresh Prawns, peeled & deveined (no heads or shells)
Instructions: In a pan, add the chopped confit garlic, chilies, and olive oil from the confit garlic. Heat the pan over low heat. Add the cooked pasta and toss until well combined. In a separate pan, preheat some olive oil over high heat. Add the prawns and sear until flambéed. Remove from the pan. Combine the pasta and prawns in a serving dish.
